What is HMF in honey?

HMF is a product of the degradation of sugars, especially fructose ,in the presence of an acid.
Hydroxylmethylfurfural (HMF) is used to measure the quality of honey.
How is HMF form in Honey?
Hydroxymethylfurfural ( HMF ) is a natural substance in honey that can be produced through a combination of heat ,time and storage.
1. Adulteration: Adding sugars or syrup to honey can significantly increase HMF level.
2. Heating : HMF formed is accelerated by heat, especially over long periods of time. Example – When low quality honey is processed by high temperature for a long time.
3. Storage : Poor storage conditions can lead to high HMF levels.
4. Low quality honey can produce high levels of HMF.
Note: Only Sundarbans honey moisture ≤25% are allowed by BST
